Breakfast is usually called the most important meal of the day for a lot of reasons. But why?
The Benefits Of Breakfast
I am not a scientist or a qualified nutritionist so I rely on what I am told, what I read and what I experience myself.
First things first, breakfast just sets me up well for the day. I get my fuel and my energy, timed properly around a quick workout and I am ready to tackle the new day and whatever challenges it presents.
From a health point of view as well, there is a belief amongst more qualified individuals than what I claim to be that a hearty breakfast will kickstart your metabolism, meaning you will actually burn more calories throughout the day and not just the few you save by not eating breakfast at all!
I once read a study that said on average, by skipping breakfast an individual can expect to gain 5-10 lb in weight over the course of a year. Just from skipping breakfast and your metabolism slowing down as a result.
If you don’t believe that though, then there is the alternative way of looking at it. Because you eat breakfast, you’re not absolutely starving by late morning and can keep your cravings under control, meaning you’re not likely to snack on naughty treats. That in itself should help keep the weight off as well.
So the bottom line is, DON’T SKIP BREAKFAST!
What Makes A Good Breakfast?
My favourite breakfast is usually some oatmeal with fresh fruit, or eggs & bacon.
Yes – eggs & bacon. Warm, comforting, hearty, vegan of course.
The ideal breakfast should really meet the following criteria:
- Low in sugar so you don’t crash by late morning
- Unprocessed and without additives, as natural as possible
- A decent amount of protein to keep you feeling fuller for longer
- Something that you will actually enjoy eating so you can make a habit of it (if you normally skip breakfast!)
So Here’s Some Great Vegan Breakfast Ideas
I know how chaotic some mornings can be so I went for mostly really simple, quick ones. My more indulgent recipes you’ll be able to find amongst my other blog posts!
Vegan Scrambled Eggs
This is almost stupidly simple, with total prep time between 5-10 minutes.
- Drain a block of tofu and crush it very finely
- In a frying pan, throw in a small amount of olive oil or low fat cooking spray
- Spoon in the crushed tofu and cook on high heat
- Add salt to taste, turmeric for health and for colour, and any other spices you like. I usually add some coriander (cilantro), red chilli powder and cumin seeds as well.
- Serve hot/warm as is for a low carb option or with a couple of slices of wholemeal toast if you’re happy with carbs

Hearty Vegan Granola
I am a huge lover of granola. I like to take some oats, create some tasty clusters and throw them in a bowl with some unsweetened almond milk. You can make these in bulk and they keep for a very long time!
- Preheat the oven to 180°C (350°F)
- Mix 2 cups of natural oats with 1/2 cup chopped nuts of your choice, 2 tbsp coconut butter, 3 tbsp maple syrup and any seeds and dried fruit you like – I usually go for raisins
- Mix up in a big bowl. The mixture should be sticky but not set. If it isn’t sticky, add in some extra maple syrup
- Line a baking tray with greaseproof paper and spread your oats mixture in an even layer of the tray
- Bake in the oven for 12-15 minutes. The oats should start to turn a slightly golden colour and the mixture should get a bit of crunch to it
- Remove from the oven and allow to cool
- Once cool, break into small clusters
- Just pour however many clusters you want into a bowl, pour over some almond milk or some coconut milk and you’re good to go.
Prep time is about 25-30 minutes but then it can last for a very long time!
I wish I could claim credit for this recipe because it is actually amazing and tastes remarkably like the real thing, but credit for this vegan bacon has to go to No Meat Athlete.
These do take a little bit longer, which is expected given that you are making something complicated from scratch but if you do have a few free minutes or fancy something indulgent on the weekend, this is perfect!
Plus you do need a waffle iron as well by the way!
- 1 cup all purpose flour
- 1/4 cup whole wheat flour
- 1 tsp baking powder
- 1 tsp baking soda
- Pinch of sea salt
- 2 tbsp liquid stevia
- 1 – 1 1/2 cups of filtered water
- 2 tbsp coconut butter, melted
- Preheat your waffle iron. Given different ones have different settings, you’ll need to read through the instructions for your own one on how to get the best results.
- Mix all your dry ingredients together in a mixing bowl and make sure it is whisked thoroughly.
- Stir in your coconut butter and 1 cup of your water
- See how thick the batter is before adding any more water. You don’t want it to thick or it will be quite cake-like and you don’t want it too runny either. You want a fairly thick liquid – imagine the consistency of a tin of paint when you pour it out
- Whisk gently but thoroughly to remove all lumps. You don’t want to overmix it.
- Gently stir in your stevia.
- Simply make your waffles in your waffle iron.
- Note that generally, without eggs, waffles can take a little bit longer to cook so allow a bit of extra time to make sure the texture is right. Slightly crisp on the outside and soft inside.
You can of course be bold with this. Throw in some chocolate chips into the mix if you want. Top with fruit, peanut butter, caramel, a complete OTT indulgent mixture of every craving you have? (You didn’t hear me say that!)
